I hope all of you had a very Happy Thanksgiving! Mine was lovely, filled with food, Family and of course football! Thanksgiving day would not be complete without any of those three things!
This Thanksgiving I was in charge of bringing a dessert. As much as I love the traditional pumpkin pie, I wanted to do something a little more creative this year. I started my search and through a friend found a recipe for Mini Pumpkin Cheesecakes! I’m going to be honest and say I did my own version of the recipe and did not follow the recipe exactly, it’s more fun that way!
Here’s the recipe:
- 1- 11 oz. package of Jello No-Bake Cheesecake Mix
- 1- can of Pumpkin
- 1-2 tsp. of Pumpkin Spice
- 3 cups of whipped cream
- 2-3 packages of Phyllo Cups
- Whipped Cream
Mix whipped cream and cheesecake mix together, then add the pumpkin and pumpkin spice. Mix thoroughly. Spoon the mixture into Phyllo Shells. Add a dollop of whipped cream to the top of each mini cheesecake. Sprinkle with cinnamon if desired. Makes approximately 45 mini cheesecakes.
